Production Notes

Grapes are carefully selected in the vineyard and quickly transported to the cellar, where they are destemmed and soft pressed.
Alcoholic fermentation occurs for ten days in stainless steel tanks.
The secondary fermentation occurs in an “autoclave” (high-pressure steamer) for 90 days at a low controlled temperature, with natural yeast and organic sugar cane added.
Once ready, the sparkling wine is filtered and bottled using the isobaric technique, ensuring flavour and perlage (effervescence) are maintained.
