- Hand harvested grapes are double selected, first in the vineyard then in the cellar.
- The must macerates on the skin for 15 days, during which pumping over and delestage are frequent in order to extract the colour and the tannin.
- The alcoholic fermentation occurs in temperature controlled (below 30°C) stainless steel tanks.
- The malolactic fermentation occurs naturally by the end of the year.
- The wine ages in first quality 25hl Allier wood oak barrel for 38
months, then after bottling ages 8 additional months in the cellar
