Straightforward and unpretentious — this is Sangiovese grown and hand-harvested on organic, low-yield vines in Tuscany, bottled under IGT Toscana rather than a stricter appellation so nothing but the grape itself sets the rules. It's a dry, everyday red with Sunday-dinner manners: built for a board of salami and sausage, a plate of charcuterie, anything cured and a little fatty. Limited edition, and one of the small-batch Italian reds we went looking for.

Alcoholic fermentation takes place with indigenous yeasts, selected in collaboration with the University of Florence and the Brunello di Montalcino Consortium.

After bottling, the wine undergoes an additional two years of refinement in the bottle
