Production Notes
After hand-harvesting in September, grapes are softly pressed to separate the must. Fermentation with selected yeasts occurs at 17°C for 20 days. The wine is then cooled, mixed with lees, and decanted three times over a month. It is filtered, aged in steel for 8 months, and bottled for an additional 5 months.
