- At the end of September, the best grapes are hand-harvested and selected in the cellar.
- Must macerates on skins for 20 days. Natural fermentation occurs in stainless steel tanks, with daily manual pumping over.
- After spring malolactic fermentation, the wine ages 16 months on lees, then two months in bottle.
Tenuta Masone Mannu
The Masone Mannu Estate in Monti, near Olbia, covers nearly 150 acres, with 47 acres of specialized vineyards. Since 2018, Giordano Emendatori has led its development, focusing on native Gallura grapes like Vermentino and Cannonau. Surrounded by nature, the estate uses biodynamic practices to grow healthy, pesticide-free grapes. Each plant is individually tended, and grapes are hand-picked with strict criteria.
