Production Notes
- Grapes are harvested by hand at the end of September, and only the best grapes are selected for vinification.
- Fermentation occurs for 30 days at 26°C in temperature-controlled, stainless steel tanks. In spring, the malolactic fermentation occurs naturally in stainless steel tanks.
- The aging occurs for at least 20 months in French oak barrique.
- After bottling, the wine ages an additional six months in the cellar.
