Corvina is the grape behind Amarone and Valpolicella itself — grown here in the hills around Verona, hand-harvested at low yield, then finished in barrique rather than put through the long drying process that makes Amarone. Left undried, Corvina is generally a brighter, lighter-framed red, prized for its acidity and a signature of sour cherry and bitter almond, with the oak lending savoury spice. Dry and food-friendly, it's built for the Veronese table: braised or roasted meat, game, and a long stewed ragù all suit it well.
