Production Notes
- Grapes are hand-harvested in early September, selecting only the finest.
- Slow alcoholic fermentation for 20 days at 15°C. Sparkling fermentation in autoclave for 12 months, with added exhausted champenoise yeast for flavour.
- Unfiltered bottled wine ages an additional 3 months.
