- The grapes are carefully selected in the vineyard and quickly transported to the cellar, where they undergo destemming and soft pressing.
- Alcoholic fermentation is halted on the fifth day to retain residual sugar.
- Secondary fermentation occurs in an "autoclave" for 30 days at a low temperature, with natural yeast and organic sugar cane added.
- The sparkling wine is then filtered and bottled using the isobaric technique to preserve its flavor and effervescence.
