Grapes are carefully hand-harvested in small crates at the end of October, then double-sorted in the vineyard and cellar to select only the best clusters. Fermentation occurs for 15 days in open vats with daily manual punch-downs, followed by 9 months of maturation in French oak barrels and at least 6 months of horizontal bottle aging

In 1972,Salvatore Zumbo began an ambitious winemaking project on the slopes of Mount Etna, planting one of the volcano’s first specialized vineyards in Contrada Santo Spirito, 750 meters above sea level. At a time when traditional bush vines dominated, his innovative cordon-trained vineyards marked the beginning of modern Etna viticulture. Determined to revive the prestige of the historic Etna DOC, Salvatore grafted 14,000 wild vines with buds from century-old vineyards rooted in volcanic soil. Today, his granddaughters Erica and Ramona carry on his legacy with passion and respect for nature, crafting wines that embody Sicily’s fiery soul and timeless elegance.
