Hand-harvested in crates during the first half of October, the grapes are carefully selected in the vineyard and again in the winery. After gentle pressing, fermentation lasts approximately 15 days. The wine then ages on its fine lees for about six months, followed by six months in stainless steel and an additional three months in the bottle

Zumbo
In 1972,Salvatore Zumbo began an ambitious winemaking project on the slopes of Mount Etna, planting one of the volcano’s first specialized vineyards in Contrada Santo Spirito, 750 meters above sea level. At a time when traditional bush vines dominated, his innovative cordon-trained vineyards marked the beginning of modern Etna viticulture. Determined to revive the prestige of the historic Etna DOC, Salvatore grafted 14,000 wild vines with buds from century-old vineyards rooted in volcanic soil. Today, his granddaughters Erica and Ramona carry on his legacy with passion and respect for nature, crafting wines that embody Sicily’s fiery soul and timeless elegance.
