Production Notes
- Grapes are harvested by hand in small crates during the last week of August. After destemming and soft pressing, the must macerates on the skins for 10 hours.
- This is followed by the alcoholic fermentation where the wine ages at least six months on the lees in stainless steel tanks, in order to extract all the polyphenols and anthocyanins of each grape.
- The enologist then bottle wine adding the “liqueur de tirage”.
- The second fermentation process will take eight years, with continuous manual “remuage”.
- During the disgorgement a natural “liqueur d’expedition” is added.
- To finish the process, the wine is aged for at least six additional months in the cellar"
Giorgi Estates
Oltrepò Pavese, a triangle beyond the Po River, boasts a dry winter climate and gentle summer breezes, ideal for Pinot Noir. Giorgi’s century-old vineyards at 400m elevation benefit from significant temperature variations, enhancing grape acidity as a natural preservative. This renowned region, a near-unbroken carpet of vineyards, is celebrated as one of Italy’s premier Pinot Noir growing areas.
