- The grapes are hand-harvested in October, then pressed to separate the stalks and fermented with the skins.
- Fermentation occurs in cement tanks for 10 days at 28°C to extract color and tannins.
- After fermentation, the wine is pressed to remove solids, decanted to eliminate lees, and aged for 2 months.
- Transferred to wooden barrels for malolactic fermentation, bottled after 8 months, and aged further.
