- Fermentation occurs slowly at 13°C to prevent malolactic fermentation.
- It ages over winter in stainless steel tanks with manual "batonnage sur lies," then naturally stabilized and bottled without anti-fermentative products, aged for three months in the cellar.
Foffani Estates
Foffani Estate, established in the 16th century and protected by the Italian Ministry of Fine Arts, resides in Clauiano, Friuli. With winemaking roots dating to 1789, its vines thrive in Eastern Friuli's clay, stone, and sandy soil. High-density planting, Guyot pruning, and green harvesting ensure optimal grape maturity. Certified SQNPI, the estate avoids chemicals, opting for mechanical weeding in August. This centuries-old commitment yields purely organic wines.
