Bouquet
An elegant and complex wine, with hints of violets, blackberries, cherry jam, liquorice, coffee, and goudron. After ten minutes in the glass it evolves, revealing a fine bouquet with an unexpected freshness.
Flavor
Complex, harmonic, and intense, with notes of red ripe fruits. The delicate aromatic flavours and vigorous tannins, typical of Nebbiolo grapes, are highlighted by its full body and a warm sensation.
Food Pairing
Stewed beef, pork and chicken, aged cheese (as an appetizer). First courses of pasta and lasagna.

Production Notes
- The grapes are harvested by hand in the middle of October, and the
best grapes are first selected in the vineyard, then in the cellar - Fermentation takes place over 15 days at 28°C in stainless steel tanks. In the spring, the malolactic fermentation occurs naturally in 30hL Slavonian oak barrels
- The wine continues to age in the barrels for 30 months before it’s ready for bottling
- After bottling, the wine ages an additional six months before resting at least for three years in the cellar
