                    Production Notes
- Grapes are hand-harvested during the early hours of the day with a double-selection
 process (first in the vineyard and then in the cellar).
- Following destemming and soft pressing, alcoholic fermentation occurs in wooden, 225-litre barriques inside a controlled temperature refrigerated room.
- The unfiltered wine elevates for 12 months in the same barrique on its lees (sediment).
- After bottling, the wine ages five additional months in the cellar.
