- Harvest is made by hand during the fresher hours of the day, grapes are selected twice, first in the vineyard and then in the cellar.
- After de-stemming and soft pressing, the alcoholic fermentation occurs at the controlled
temperature of 28°C in stainless steel tanks. - The wine ages two months in a stainless steel tank and after bottling, ages three additional months in the cellar.
