Production Notes

  • Grapes are selected and hand-harvested early in the morning, then macerate for a day at a controlled temperature.
  • After soft pressing, the free-run must is immediately separated from the skins.
  • Slow alcoholic fermentation takes place at 13°C, which prevents malolactic fermentation.
  • The wine ages throughout the winter in stainless steel tanks, with several “batonnage sur lies” performed manually.
  • Naturally stabilized, the wine is bottled without the use of anti-fermentative products.
  • After bottling, additional aging of at least three months takes place in the cellar.

Friuli Venezia Giulia

Foffani Estates

Foffani Estate, established in the 16th century and protected by the Italian Ministry of Fine Arts, resides in Clauiano, Friuli. With winemaking roots dating to 1789, its vines thrive in Eastern Friuli's clay, stone, and sandy soil. High-density planting, Guyot pruning, and green harvesting ensure optimal grape maturity. Certified SQNPI, the estate avoids chemicals, opting for mechanical weeding in August. This centuries-old commitment yields purely organic wines.
