- Following the soft pressing, only the best free run must (55% of the total amount of grape juice) is selected for winemaking.
- The alcoholic fermentation takes place at controlled low temperatures to prevent any kind of modification of the must
- The second fermentation occurs in temperature and pressure controlled stainless steel tanks for six months
