- Hand harvested grapes are double selected, first in the vineyard than in the cellar.
- The must macerates on the skin for 15 days, during which pumping over and delestage are frequent in order to extract the colour and the tannin.
- The wild alcoholic fermentation occurs in temperature controlled stainless steel tanks.
- The malolactic fermentation occurs naturally during the following spring in French oak tonneau.
- The wine ages in French oak barrique for four months, then after bottling ages three additional months in the cellar
