Production Notes

  • Grapes are carefully selected in the vineyard and quickly transported to the cellar, where they are destemmed and soft pressed.
  • Alcoholic fermentation occurs for ten days in stainless steel tanks.
  • The secondary fermentation occurs in an “autoclave” (high-pressure steamer) for 90 days at a low controlled temperature, with natural yeast and organic sugar cane added.
  • Once ready, the sparkling wine is filtered and bottled using the isobaric technique, ensuring flavour and perlage (effervescence) are maintained.
