Grapes are carefully selected in the vineyard, quickly transported to the cellar, destemmed, and soft-pressed. Alcoholic fermentation occurs for ten days in stainless steel tanks. Secondary fermentation in an autoclave lasts 90 days at low temperatures with natural yeast and organic sugar. The sparkling wine is then filtered and bottled using the isobaric technique to preserve flavor and perlage.
