- Grapes are early harvested by hand during the cooler hours of the day, usually in the early morning or at night. This is done in order for the grapes to cool off, keeping the sugar levels stable and increases their quality and acid levels.
- The alcoholic fermentation occurs at controlled temperature in stainless steel tanks. The second fermentation occurs for three months into pressurized and temperature controlled stainless steel tanks, adding organic Elderflower juice extract.
- After bottling using isobaric technique, then the obtained wine ages for one more months in the cellar.
