Production Notes
- Vines grow on a volcanic soil, and the grapes are early harvested by hand during the
cooler hours of the day, usually in the early morning or at night. This is done in order for the grapes to cool off, keeping the sugar levels stable and increases their quality and acid levels. - The vinification is a delicate process in order to keep the flavourful characteristics of the grapes intact. The alcoholic fermentation occurs at controlled temperature in stainless steel tanks, separated for both grapes.
- Maturation takes place separately in French oak tonneau and 30 HL barrels for one year where occurs a spontaneous malolactic fermentations. After blending and bottling, then the obtained wine ages for eight more months in the cellar.
