- The best grapes are hand-harvested in the vineyards and then double-checked in the cellar.
- Alcoholic fermentation is carried out in concrete tanks without the addition of selected yeast and without controlling the temperature.
- Delicate “pumping over” and “pumping down” is performed manually each day.
- The free-run must macerates on the skins for at least one month.
- Unfiltered wine evolves on its fine lees for 12 months in small concrete tanks.
- After bottling, the wine ages for an additional six months in the cellar.
