Production Notes
- Grapes are harvested by hand in the end of September.
- Following destemming and soft pressing, the grape juice macerates on
the skins at least for three days at 28 °C controlled temperature, with
automatic pumping over. - Wine’s temperature is dropped to 0°C in order to cut off the fermentation and keep the alcohol at 6%.
- The second fermentation occurs in autoclave (temperature and pressure controlled tanks) at low temperature for 6 months
