- Grapes are carefully selected, quickly transported to the cellar, destemmed, and soft-pressed.
- Alcoholic fermentation lasts 10 days in temperature-controlled stainless steel tanks. Secondary fermentation uses the Charmat method in an autoclave for 45 days with natural yeast and organic sugar.
- The sparkling wine is then filtered and bottled using the isobaric technique, preserving flavor and perlage.
