Production Notes

  • Grapes are carefully selected, quickly transported to the cellar, destemmed, and soft-pressed.
  • Alcoholic fermentation lasts 10 days in temperature-controlled stainless steel tanks. Secondary fermentation uses the Charmat method in an autoclave for 45 days with natural yeast and organic sugar.
  • The sparkling wine is then filtered and bottled using the isobaric technique, preserving flavor and perlage.

Veneto

Azienda Agricola Dissegna

Lison-Pramaggiore, nestled in Eastern Veneto near the Adriatic and Venice, has enchanted since Roman times with its high-quality red wines crafted by Benedictine monks. The unique blend of calcium and clay soil bestows structure and freshness. During the Venetian Republic, these wines graced tables across Europe. Founded in 1925, Dissegna's organic vineyard, now tended by Antonio’s grandson Francesco, upholds millennial traditions with poetic dedication.
