Production Notes
The hand harvested grapes undergo fermentation for 10 days in temperature-controlled stainless steel vats (26–28°C). After racking, partially dried grapes, previously left to wither on bamboo mats, are added to the wine to start a second fermentation.
Once fermentation is complete, the wine is aged in wooden barrels for 9 months
