- Grapes are harvested by hand starting from the end of September, with a very careful selection of only the perfectly ripened bunches
- Following the alcoholic fermentation in stainless steel vats with indigenous yeast, the wine evolves into concrete tanks at least for six months
- After bottling, the wine ages three more months in the cellar
