Production Notes
- Grapes are harvested by hand in small wood crates in the end of September, double selected first in the vineyard then in the cellar.
- After destemming and pressing, the obtained must macerates on the skins for 14 days at 26°C controlled temperature.
- The natural malolactic fermentation occurs in French oak barrique, where the wine ages for 8 months.
- After bottling the wine ages for three additional months in cool cellars.
